MEDITERANEAN STYLE SUMMER FLOUNDER (FLUKE)

4 – MEDIUM SIZED FLUKE FILLETS
(YOU CAN SPLIT 2 LARGE FILLETS ALONG THE CENTERLINE IF YOU WERE LUCKY AND CAUGHT THE BIG ONE)1 1/2

½ CUPS FLOUR SEASONED WITH SALT & PEPPER FOR DREDGING

2- LARGE EGGS BEATEN FOR DIPPING

1-CUP JANPANESE PANKO CRUMBS OR SEASONED BREAD CRUMBS

OLIVE OIL FOR PAN FRYING (USE JUST ENOUGH OIL TO COAT THE PAN BOTTOM FULLY)

1-TABLESPOONS OF CAPER BERRIES

2-MEDIUM PLUM TOMTOES DICED

2- TABLESPOONS WHOLE BUTTER

2- OUNCES DRY WHITE WINE

2 TEASPOONS OF MINCED FRESH CHIVES OR FINE CHOPPED ITAIAN PARSLEY

COOKING DIRECTIONS
*PAT THE FILLET DRY WITH PAPER TOWELS, DREGE EACH FILLET IN FLOUR, THEN DIP IN BEATEN EGG AND LASLTY COAT FULLY WITH CRUMBS.

*SAUTE` THE FILLETS OVER MEDIUM TO HIGH HEAT UNTIL NICELY BROWNED- BE CAREFUL NOT TO BURN THE CRUMBS.  ADD A BIT MORE OLIVE OIL IF NEEDED TO THE PAN.

*REMOVE FILLETS TO A BAKING DISH AND PLACE IN A 350 DEG. OVEN TO FINISH COOKING.

*ADD CAPERS AND DICED TOMATOES TO PAN AND SAUTE OVER HIGH HEAT UNTIL COOKED ABOUT ½  WAY.  AGAIN BE CAREFUL NOT TO BURN THE
DRIPPINGS IN THE PAN.

*DEGLAZE PAN WITH WHITE WINE AND REDUCE BY HALF.  SWIRL IN THE WHOLE BUTTER TO THICKEN PAN SAUCE AND SEASON WITH SALT AND WHITE PEPPER IF NEEDED.

*REMOVE BAKING DISH WITH FILLETS AND SPOON THE CAPER TOMATO SAUCE OVER TOP.  SPRINKLE WITH MINCED CHIVES OR CHOPPED PARSLEY.

ENJOY THIS DISH WITH A WELL CHILLED PETITE CHABLIS OR MACON BLANC
